  • In a large pot, heat oil over medium heat until hot but not smoking. Add in sausage and cook meat until browned and crumbly for about 5 minutes. 
  • Add onion. Continue to cook, stirring frequently until the onions are softened.
  • Carefully add in 4 cups water and the chicken broth to the pot and bring to a boil. 
  • Stir in pasta. Reduce heat to medium-low, and simmer, stirring often, until pasta is barely tender, about 6 minutes. 
  • Add broccoli, spinach, kale, tomatoes, and salt. Simmer until broccoli is tender and heated through.
  •  Serve in bowls and top with freshly grated parmesan cheese.
