INGREDIENTS
2 teaspoons olive oil
½ pound sweet Italian sausage, casings removed
1 small yellow onion, finely chopped (about ¾ cup)
14.5 oz low-sodium chicken broth
1 cup tiny uncooked pasta shells, such as conchigliette (roughly 4 ounces)
1 – 10 oz bag of
Stahlbush Island Farms Frozen Broccoli Florets
½ – 10 oz bag of
Stahlbush Island Farms Frozen Cut Spinach
½ – 10 oz bag of
Stahlbush Island Farms Frozen Curly Kale
1 -14.5 oz can diced tomatoes
¾ teaspoon salt
Freshly grated parmesan cheese for topping
INSTRUCTIONS
In a large pot, heat oil over medium heat until hot but not smoking. Add in sausage and cook meat until browned and crumbly for about 5 minutes.
Add onion. Continue to cook, stirring frequently until the onions are softened.
Carefully add in 4 cups water and the chicken broth to the pot and bring to a boil.
Stir in pasta. Reduce heat to medium-low, and simmer, stirring often, until pasta is barely tender, about 6 minutes.
Add broccoli, spinach, kale, tomatoes, and salt. Simmer until broccoli is tender and heated through.
Serve in bowls and top with freshly grated parmesan cheese.
