Greens & Beans Soup

INGREDIENTS
  • 200g Italian sausage
  • 3 cloves of garlic, minced
  • 1 medium onion, minced
  • 1 medium carrot, diced
  • 2 stalks of celery, diced
  • salt & pepper to taste
  • 2 tsp oregano
  • 2 tsp parsley
  • 1 can white beans, strained
  • 4 cups low sodium chicken stock
  • 1 – 8 oz bag Stahlbush Chopped Curly Kale
  • 1 – 10 oz bag Stahlbush Cut Spinach
  • splash of fresh lemon juice, to finish freshly grated parmesan cheese, to finish
INSTRUCTIONS
  • In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it apart with a spoon, until browned and cooked through. Drain excess fat if needed.
  • Add the garlic, onion, carrot, and celery to the pot. Cook for 5–6 minutes, stirring occasionally, until softened and fragrant. Season lightly with salt, pepper, oregano, and parsley.
  • Stir in the white beans and chicken stock. Bring to a boil, then reduce the heat and let simmer for about 15 minutes to allow the flavors to meld.
  • Stir in the kale and spinach. Continue to simmer for 5–7 minutes, until the greens are wilted and tender.
  • Add a splash of fresh lemon juice. Taste and adjust seasoning with more salt and pepper, if needed.
  • Ladle into bowls and top with freshly grated Parmesan cheese before serving.
