World Vegetarian Day Recipes

What is Veganuary?

Veganuary is all about fresh starts and trying something new! It started in 2014 in the UK as a way to introduce more people to vegan eating, and last year nearly 500,000 thousand people to the pledge to eat vegan throughout the month of January. People switch to eating vegan for a variety of reasons, whether it’s because it’s better for the planet, healthier, or kinder to animals. Others eat vegan on a regular basis but never cut animal products completely out of their diet, in what’s called the flexitarian diet.

Whether or not you continue to eat vegan on a regular basis or not, here are a few easy recipes for veganuary that can help you get started.

Vegan Chili Pot Pie

This recipe includes the chili as well as a recipe for vegan cornbread muffins, an all-around winner if you ask us. We love that you can add any kind sub-in for the meat you’d like. Our favorite thing about this recipe is how the chipotle peppers, beer, and cocoa powder come together for the ultimate umami flavor, while Stahlbush Super Sweet Corn adds a satisfying crunch. We think this is a recipe you’ll come back to over and over again!

Vegan Creamy Corn Pasta

This recipe brings our Super Sweet Corn and pasta together with garlic, white wine, and butter to create a super-easy, one-pot dish that tastes anything but thrown together. This is a vegan dish that stands on it’s own as a main course and is equally easy to thrown together on a night when you don’t know what you want, but you want it FAST. Mexican Rice Casserole

It’s got our crazy Corn, Super Sweet Corn, Diced Onions, and Black Beans and Brown Rice. Just grab some cheese, guac, and tomato salsa on your way home from work and let us know when it’s ready!

Vegan Mushroom Wild Rice Soup

We love our mushrooms in Oregon! This hearty soup can accommodate all the mushrooms you want, and it’s got instructions for stovetop prep or Instant Pot to cut your cooking time. Of course, we love the way herbs simmering in the white wine sauce fills your whole house with delicious aromatics! Stahlbush Island Farms Chopped Curly Kale adds fantastic texture to this soup along with vitamins A, K, B6 and C, calcium, potassium, copper, manganese and extra fiber.

Spinach Artichoke Pasta

This is one of our favorite recipes! Vegan Strawberry Turnovers

We couldn’t call this list finished without some sweet treats! These strawberry turnovers using Stahlbush Whole Strawberries are easy to make, gorgeous, and tasty. Coconut milk is a great cow’s milk sub and makes a wonderful, thick icing.

Blueberry Crumble Bars
