Sparkling Blueberry Ginger Mocktail

INGREDIENTS

Blueberry Syrup
  • 480 ml water
  • 2 cups Stahlbush Frozen Blueberries
  • 2 tbsp finely chopped fresh rosemary, stems removed
  • 27 g or 3 tbsp  freshly grated ginger
  • 1 tbsp maple syrup
  • 1 tsp lemon juice

Sparkling Mocktail
  • Ice cubes
  • 100 ml blueberry syrup – add more to your liking
  • 120 ml sparkling water
  • Few drops of orange bitters

INSTRUCTIONS
Blueberry Syrup
  • In a small saucepan, combine the water, blueberries, rosemary, and ginger. Bring to a boil, then cover and simmer for 20 minutes, until the blueberries have lost most of their color and the mixture is a vibrant color and fragrant.
  • Strain the blueberry mixture, making sure to squeeze the blueberries into a jar and add the maple syrup and lemon juice. Add more as desired to taste. Stir to combine and set aside. This syrup can be made ahead of time and chilled in the fridge for a few days.
Mocktail
  • Assembly: add ice to your drinking glasses add 100 ml of blueberry syrup. Top with sparkling water, and finish with optional orange bitters and additional blueberry syrup to taste as needed.
  • Leftover syrup can be saved in a sealed container in the fridge for up to 1 week or frozen into cubes and saved in an air-tight container in the freezer up to 2 months.
