Spring Pea Deviled Eggs
INGREDIENTS
- 12 large, hard-boiled eggs
- 1/2 cup Stahlbush Island Farms Frozen Green Peas, thawed
- 2 tablespoons roughly chopped cilantro
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- Salt & pepper
- Crispy pancetta, for serving
- Chives, to garnish
- Smoked paprika, to garnish
INSTRUCTIONS
- Slice eggs in half lengthwise & gently scoop out the yolks. Transfer yolks to a small food processor.
- Add the peas, cilantro, mayonnaise, Dijon, salt & pepper. Puree until smooth & season to taste with salt.
- Transfer mixture to a piping bag fitted with a star tip. Pipe a dollop of the filling back into each egg white. Garnish with pancetta, chives & smoked paprika. Serve immediately or store in an airtight container until ready to serve.
