Skillet Chicken Fried Rice
INGREDIENTS
- 4 tablespoons vegetable oil, divided
- 1 (10 oz) boneless, skinless chicken breast, cut into 1/2’’ pieces
- Salt, to taste
- 1 1-inch piece of ginger, peeled & minced
- 2 cloves of garlic, minced
- 4 sliced scallions, white & green parts separated
- 3 cups cooked sushi rice, chilled
- 3 large eggs, lightly beaten
- 1/2 cup diced carrots, blanched
- 1/2 cup Stahlbush Island Farms Green Peas, blanched
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons toasted sesame oil
- 1/2 teaspoon granulated sugar
- Sesame seeds, to garnish
INSTRUCTIONS
- In a large non-stick skillet over medium heat, add 2 tablespoons of oil & chicken. Season with salt. Once the chicken is cooked throughout, remove from the pan & set aside.
- To the same skillet add the remaining oil, ginger, garlic & white parts of the scallions. Cook until fragrant, about 2 minutes.
- Add the rice & cook until heated throughout. Season with salt. Create a well in the center & add the eggs. Work the rice into the egg.
- Add back the chicken, carrots, peas, soy sauce, rice vinegar, sesame oil & sugar. Toss until well combined.
- Transfer to a serving bowl. Garnish with the green parts of the scallion & sesame seeds.
