Skillet Chicken Fried Rice

INGREDIENTS
  • 4 tablespoons vegetable oil, divided 
  • 1 (10 oz) boneless, skinless chicken breast, cut into 1/2’’ pieces
  • Salt, to taste 
  • 1 1-inch piece of ginger, peeled & minced
  • 2 cloves of garlic, minced
  • 4 sliced scallions, white & green parts separated 
  • 3 cups cooked sushi rice, chilled 
  • 3 large eggs, lightly beaten 
  • 1/2 cup diced carrots, blanched
  • 1/2 cup Stahlbush Island Farms Green Peas, blanched 
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon granulated sugar 
  • Sesame seeds, to garnish 
INSTRUCTIONS
  • In a large non-stick skillet over medium heat, add 2 tablespoons of oil & chicken. Season with salt. Once the chicken is cooked throughout, remove from the pan & set aside.
  • To the same skillet add the remaining oil, ginger, garlic & white parts of the scallions. Cook until fragrant, about 2 minutes.
  • Add the rice & cook until heated throughout. Season with salt. Create a well in the center & add the eggs. Work the rice into the egg.
  • Add back the chicken, carrots, peas, soy sauce, rice vinegar, sesame oil & sugar. Toss until well combined.
  • Transfer to a serving bowl. Garnish with the green parts of the scallion & sesame seeds.
