Hidden Veggie Pancakes

INGREDIENTS
  • 1 ½ Cup All-Purpose Flour
  • 3 ½ Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Cup Stahlbush Island Farms Spinach
  • 1 Tbs Sugar
  • 1 Egg
  • 1 Cup Milk
  • ½ Cup Heavy Whipping Cream
  • 2 Tbs Maple Syrup
INSTRUCTIONS

Pancakes

  1. Add frozen spinach and 2 tablespoons of water to a blender and blend until smooth
  2. In a medium bowl whisk together flour, salt, baking powder and sugar
  3. Add egg and milk until combined and then stir in spinach mixture until batter is well combined.
  4. Heat a skillet to medium low and spoon 2 tablespoons of batter on to the pan. Cook for 2-3 minutes on each side or until bubbles subside (on the first side).

Maple Whipped Cream

  1. Add heavy whipping cream and maple syrup to a medium sized bowl and whisk using a hand mixer until mixture has thickened
