Non-Alcoholic Raspberry Passion Fruit Mocktail

Yield: 4 drinks
INGREDIENTS
  • 1 – 10 oz bag of Stahlbush Island Farms Frozen Red Raspberries
  • Juice of 2 limes
  • 20 mint leaves
  • 16 oz Passion fruit simple syrup *see below
  • 4-10 oz of sparkling water, to preferred consistency
  • Ice cubes

Per drink:

  • 5 mint leaves fresh, chopped
  • 1 tsp fresh lime juice
  • 5-8 frozen raspberries, slightly thawed
  • 1 cup ice cubes crushed
  • 4 oz soda water
  • 2-4 oz of passion fruit simple syrup (to taste)

For Passion Fruit Syrup

  • 6 oz water
  • 6 oz granulated sugar
  • 1 bag of frozen passion fruit puree (need about 1/2 a cup)
INSTRUCTIONS
  • Muddle together the mint leaves, lime juice, and raspberries in a tall glass.
  • Fill each glass halfway with ice.
  • Add in the chilled passion fruit syrup, followed by the soda water. Adjust amounts to taste as desired.
    For passion fruit syrup:
  • Heat a 8 oz of water with 8 oz of granulated sugar (a basic simple syrup is a 1 to 1 ratio of water to sugar). Make sure all the sugar dissolves and bring to a boil for a few minutes. Let cool slightly and add in defrosted passion fruit puree. Add more puree to taste if you like a tarter flavor. Chill completely before use. Can be stored in the fridge for about a week in an airtight container.
