Easy Strawberry Rhubarb Bars

These can be made both gluten-free and dairy-free!

INGREDIENTS

Ingredients:

  • 2-3 bags Stahlbush Island Farms Frozen Strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup brown sugar
  • 2-3 tbsp cornstarch
  • 2 cups (gluten free) sugar cookie dough (make your own or buy premade dough)
INSTRUCTIONS
  • In a pot, combine thawed strawberries, rhubarb, brown sugar, and cornstarch. Heat it up on medium, stirring sometimes, until it gets thick and syrupy (about 10-15 minutes).
  • Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper.
  • Take most of the cookie dough (¾ of it) and press it with your fingers into the bottom of the pan. 
  • Pour the hot strawberry mixture over the pressed cookie dough crust.
  • Grab the rest of the cookie dough and crumble it on top of the filling.
  • Bake the bars at 350°F (175°C) for 40 minutes.
  • Let the bars cool completely before cutting into squares.
