Roasted Turkey Breast with Maple Cranberry Sauce

INGREDIENTS

Roasted Turkey Breast

  • 1 turkey breast (with bone or boneless, approx. 3-4 pounds)
  • 2 tablespoons Kosher salt
  • Black pepper
  • ¼ cup butter (room temperature)
  • Fresh sage, rosemary, thyme

Maple Cranberry Sauce

INSTRUCTIONS

Turkey Breast:

  • Preheat oven to 325º F
  • Combine softened butter and herbs to make compound butter.
  • Generously season turkey breast with kosher salt and black pepper.
  • Rub the compound butter all over the breast and press some underneath the skin
  • Add turkey breast to a dutch oven or braiser pan with a lid.
  • Position the oven racks so the turkey will sit in the center of the oven. Cook at 325 degrees F for about 14-15 minutes per pound, or until internal temperature (inserted into the thickest part of the breast) reaches 165 degrees.
  • Remove the lid and allow the skin to brown for 10 minutes—no longer!
  • Allow turkey breast to rest for 10 minutes prior to slicing.
  • Serve with the maple cranberry sauce.

Maple Cranberry Sauce:

  • Add the frozen cranberries, ¼ cup water, and maple syrup to a saucepan. Bring the mixture to a boil over medium-high heat.
  • Boil the cranberries for about 2 minutes, until they have begun to pop.
  • Remove from heat and add orange juice and orange zest, if desired.
