Butternut Squash Burgers
INGREDIENTS
- 1 10 oz bag Stahlbush Island Farms Butternut Squash
- 2 tablespoons extra virgin olive oil
- 1 1/2 teaspoons smoked paprika, divided
- Salt & pepper, to taste
- 1/2 cup cooked white beans, rinsed & drained
- 1/2 cup cooked quinoa
- 3/4 cup fresh bread crumbs
- 3 tablespoons sliced green onion, white & green parts
- 2 cloves of garlic, minced
- 1 large egg, whisked
- Burger buns, for serving
- Slice tomato, for serving
- Sliced red onion, for serving
- Lettuce, for serving
- Mayo, for serving
INSTRUCTIONS
- Preheat the oven to 350(f) degrees. On a small baking sheet toss the butternut squash cubes with oil, 1/2 teaspoon paprika, salt & pepper. Roast until fork tender, about 15 to 20 minutes.
- Transfer the roasted squash to a mixing bowl & add the white beans. Mash together with a fork until blended.
- Stir in the quinoa, bread crumbs, green onion, garlic, egg, remaining paprika, salt & pepper until well combined.
- Divide mixture into 4 equal portions & shape into a burger patty. Refrigerate the burgers until firm, about 30 minutes.
- Transfer burgers to a lined baking sheet & cook at 375(f) degrees until heated throughout, about 15 to 20 minutes.
- When ready to serve, place the burger on a bun & top with sliced tomato, sliced red onion, lettuce & mayo.
