Protein-Friendly Peanut Butter Chocolate Chickpea Clusters

Looking for a sweet and salty treat that tastes good and also has protein in it? These Peanut Butter Chocolate Chickpea Clusters combine two ingredients that contribute protein: chickpeas and peanut butter!

A ½-cup serving of chickpeas provides about 8 grams of protein, while 1 tablespoon of creamy peanut butter adds roughly 4 grams of protein. Together, they make a delicious combination of plant-based protein (about 12g!), rich chocolate, and satisfying crunch.

Want to add even more texture? Toss in some roasted peanuts for extra crunch and additional protein. It’s an easy way to customize these chocolate clusters while keeping every bite delicious.

Why You’ll Love These Chocolate Chickpea Clusters

  • Easy, no-bake preparation: Melt, mix, scoop, and freeze. No oven required!
  • Sweet and salty flavor: Dark chocolate and sea salt roasted chickpeas make a delicious combination.
  • Customize them: Add roasted peanuts, crispy chow mein noodles, feuilletine, or corn flakes for another layer of texture.
  • Perfect for the freezer: Make a batch ahead of time and keep these little treats ready whenever you want one.

INGREDIENTS

  • 1 – 16-oz bag of Stahlbush Island Farm’s Frozen Organic Chickpeas
  • 9 oz dark chocolate, chips or chopped, add more chocolate if adding optional mix-ins.
  • Creamy peanut butter: A drizzle adds a rich, nutty flavor that pairs perfectly with the chocolate.
  • sea salt flakes
  • Optional crunchy mix-ins: Try chopped roasted peanuts, crispy chow mein noodles, feuilletine flakes, or lightly crushed corn flakes. *You may need more chocolate if you add mix-ins. Adjust accordingly.

INSTRUCTIONS

  • Steam the chickpeas for 3-5 minutes. Drain any excess liquid, and transfer to a large bowl. If you’re looking for added crunch, you can air-fry these instead of steaming first.
  • Melt 9 ounces of dark chocolate and pour it over the chickpeas. Stir thoroughly so the chocolate fully coats the chickpeas. If adding anything crunchy, add it at this point as well and mix everything together. *
  •  Line a large plate with parchment paper and dollop large spoonfuls of the chocolate-covered chickpeas onto the parchment paper.
  • Warm the peanut butter to be able to be drizzled on top. Drizzle the peanut butter on each cluster and top with a sprinkle of sea salt. Freeze for 30 minutes to harden the chocolate.
  • Enjoy the clusters straight from the freezer for the best texture.
  • Leftover clusters can be stored in a container or zip-top bag in the freezer for a few weeks.
