INSTRUCTIONS

Prepare the Strawberry Swirl
  1. Add the frozen strawberries, ⅓ cup sugar, and salt to a saucepan.
  2. Cook over medium heat until the strawberries soften and release their juices.
  3. Continue cooking until the mixture thickens slightly.
  4. Allow the strawberry mixture to cool, then blend until smooth or leave slightly chunky depending on your preferred texture.
  5. Refrigerate until ready to use.
Make the Cheesecake Ice Cream Base
  1. In a medium bowl, whisk together the egg yolks and sugar until smooth and slightly thickened.
  2. Warm the milk in a saucepan over medium heat until steaming but not boiling.
  3. Slowly pour the warm milk into the egg mixture while whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium-low heat, stirring frequently, until it thickens enough to coat the back of a spoon.
