Black Eyed Pea Burgers

INGREDIENTS
  • 1 ½ cup black eyed peas

  • 1 egg plus 1 egg white
  • 1 cup spinach
  • 1/3 cup cornmeal
  • 1/3 cup red onion
  • 1/3 cup red cabbage
  • 1/3 cup carrots
  • ½ Jalapeno
  • 1 ½ teaspoon garlic
  • 1 teaspoon ground cumin
  • 1 ½ teaspoon salt
  • 1 teaspoon lime juice
  • Vegetable oil for cooking

INSTRUCTIONS
  • In a food processor, pulse all the ingredients, scraping down the sides occasionally to mix evenly. Once the mixture sticks together when squeezed, scoop out about ½ cup and shape into burger patties making sure it’s packed together well.

  • Place about ½ inch of vegetable oil into a large skillet and set over medium heat. Once the oil is up to temperature (it will bubble when a small amount of batter is put in), add in a few patties, do not overcrowd. Cook until the first side is golden brown, about 4-5 minutes, gently flip over and continue cooking about 3 minutes longer.

  • Note: If flipped too early, the patty can break. Make sure to pack the patty well and only flip once the first side is completely cooked.

  • Makes: 6-8 patties – Time: 30 minutes
