Blueberries, From Our Farm to your Freezer

Blueberries are some of our favorites here at Stahlbush, they’re deliciously tangy, good for you, and can be used in countless ways. Our blueberries start here, at our picturesque blueberry fields in Corvallis, Oregon. We harvest them with care at the height of their ripeness, and freeze them right away to ensure their natural flavor and freshness is preserved. Afterwards, our blueberries are brought to stores near you in the freezer section, ready to be used in smoothies, bread, pancakes, scones, and more. Here are some of our tried-and-true recipes featuring blueberries:

Blueberry Banana Bread

Put a twist on classic banana bread, by livening it up with frozen blueberries. This light, summery bread recipe is perfect for anytime of day, and we won’t tell anyone if you can’t resist it for breakfast!

Ingredients

1 ¾ cups all purpose-flour

1 teaspoon baking powder

1/8 teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, room temperature

¾ cups sugar

2 large eggs

¼ cup buttermilk

½ teaspoon vanilla extract

3 ripe bananas, mashed

2 cups frozen Stahlbush Island Farms blueberries

Preparations

  • Preheat oven to 350 F.
  • In a small mixing bowl, sift together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream the butter and sugar together. Add the eggs, buttermilk, mashed bananas, and vanilla into the mixture. Mix until fully combined and smooth.
  • Once fully combined, slowly add in the flour mixture.
  • Place the frozen blueberries in a small bowl, and toss with flour until the berries are fully coated.
  • Carefully fold in blueberries into the mixture.
  • Portion the batter among four greased mini loaves and bake for 35 – 40 minutes, or until a toothpick inserted in the center comes out clean.

Baked Oatmeal with Blueberries

Oatmeal is a staple breakfast meal everywhere, but with this simple recipe you can elevate your oatmeal to be tastier, and better for you!

Ingredients:

2 eggs

¼ cup butter, melted

1/3 cup packed brown sugar

½ teaspoon salt

2 teaspoons baking powder

1 teaspoon cinnamon

1 ¼ cup milk, or dairy alternative

3 cups oatmeal

1 10 oz. package of Stahlbush Island Farms blueberries

Preparation

  • Preheat oven to 350 F.
  • In a large mixing bowl, combine ingredients in the order listed above.
  • Pour mixture into an oiled 9”x13” glass baking pan and cover with foil.
  • Bake for 30 minutes or until firm and golden brown.
  • Enjoy, and serve with warm milk.

Blueberry and Buttermilk Scones

If you’re in the mood for a delectable, indulgent breakfast or snack, try this blueberry and buttermilk recipe! Simple, but delicious, it’s no wonder why this recipe is a staple for us!

Ingredients

1 ½ cups all purpose flour

½ cup cake flour

3 tablespoons granulated sugar

2 ½ teaspoons baking powder

¾ teaspoons salt

1 stick cold unsalted butter, cut into small cubes

1 cup Stahlbush Island Farms blueberries

½ cup low-fat buttermilk

1 large egg, plus 1 large egg beaten for egg wash

½ teaspoon vanilla extract

Sugar, for garnish

Preparations

  • Preheat oven to 375 F, and line a baking sheet with parchment paper.
  • Whisk together flour, granulated sugar, baking powder, and salt in a large bowl.
  • Cut in butter with a pastry cutter, or rub in with your fingers or fork until dough comes together. When dough is combined, stir in blueberries.
  • In a separate bowl, whisk together buttermilk, 1 egg, and vanilla.
  • Pour over flour mixture slowly, and stir lightly with your fingers or a fork until dough comes together. Be careful not to over-knead, only mix until just combined.
  • Pat dough into a 1-inch thick round. Cut into 12 wedges.
  • Transfer wedges to prepared baking sheet, brush with egg wash and sprinkle with sugar.

Bake for about 22 minutes, or until golden brown and cooked through.
