Creamed Spinach

Ingredients
  1. 2 bags of Stahlbush Island Farms Cut Spinach thawed and squeezed of excess water
  2. 2 cups whole milk
  3. 4 tablespoons butter
  4. 1/4 cup chopped sweet onion
  5. 1 bay leaf
  6. 1/4 cup freshly grated parmesan cheese
  7. Pinch of nutmeg
Instructions
  1. Melt butter over medium heat.
  2. Stir in flour.
  3. When combined, add onion and bay leaf.
  4. Saute for about 3 minutes.
  5. Add the milk slowly ensuring that it is thoroughly mixed before adding more.
  6. Boil for 10 minutes whisking constantly.
  7. Reduce heat to low.
  8. Remove the bay leaf and add the spinach.
  9. Simmer for another 5 minutes.
  10. Stir in the parmesan cheese and nutmeg.
  11. Serve immediately.
