Ricotta and Peas on Toast
A delicious toast or snacking recipe

  1. 1 10oz. bag of Stahlbush Island Farms Green Peas
  2. 1/2 cup Stahlbush Island Farms chopped spinach
  3. 1/2 onion finely diced
  4. 1 Tablespoon of unsalted butter
  5. 1 cup Ricotta (preferably homemade)
  6. Country Bread
  1. Prepare the green peas according to packaging instructions and set aside. In the meantime, melt the butter in a saucepan. Saute the onion until translucent. Add the spinach and continue to saute for about 5-7 minutes more. Remove from heat. Drizzle slices of country bread with olive oil and toast until crisp throughout and lightly golden. Spread each slice with ricotta cheese. Top with spinach mixture and green peas. Enjoy!
