Peas with Wild Mushrooms & Proscuitto

INGREDIENTS
  • 3 tablespoons extra virgin olive oil2 cloves of garlic, thinly sliced
  • 2 shallots, thinly sliced
  • 2 cups mixed wild mushrooms, sliced
  • Salt & pepper, to taste
  • 2 teaspoons balsamic vinegar
  • 100 grams prosciutto, thinly sliced
  • 1 bag Stahlbush Island Farms Peas
  • Freshly grated parmesan cheese, to finish
INSTRUCTIONS

1. In a large skillet over medium heat add the olive oil, garlic & shallots. Cook until fragrant, about 5 minutes.

2. Reduce heat to low & add the mushrooms. Season with salt & pepper. Cook until softened, about 10 minutes.

3. Add the balsamic vinegar & prosciutto. Cook until the prosciutto begins to crisp up.

4. Add the peas & cook until heated throughout. 

5. Finish with parmesan cheese & serve.
